Breakfast, brunch, lunch, dinner, doesn’t matter what time of day, this sausage and sweet potato hash is sure to fill your belly and maybe even knock your socks off. After all, in my household you really can’t go wrong with meat and potatoes. As simple as hash normally is, this dish is packed full of flavor that makes it seem more complex. I assure you though, its easy as pie to make. I take that back, its much easier to make than pie. Whats up with that saying? Pie can be complicated people! Anyways, you can’t mess this hash up!
2 medium sweet potatoes, peeled and diced into cubes
1 green pepper, diced
1 red pepper, diced
1/2 white onion, chopped
1 pound of mild-medium ground sausage, browned
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp salt
If your making this for brunch or dinner, feel free to make a mimosa before you start, or pour your favorite glass of wine. It just makes the cooking process more fun and the messy kitchen less noticeable!
Directions:
1.Bring a medium-sized pot of water to a boil and add diced sweet potatoes. Cook potatoes until just tender. If you happen to get distracted by the kids or maybe drink too much wine and forget about the potatoes, they’ll be mushy and lose their shape. Once tender, drain liquid and set potatoes aside for later.
2. In a medium skillet, saute onions and peppers with olive oil. When the veggies start to become tender, add in the chili pepper, cumin, and salt.
3. Once veggies are tender, Â add in the ground sausage and tender potatoes. Cook for a minute or so until heated through. Serve warm and if its dinner time, pour yourself another glass of wine! I told you it was easy!
